The Root That Became A Crunch
Long before tapioca became a snack, it was simply kappa.
A humble root that became deeply woven into Kerala's food culture.
Tapioca is not native to India. It originated in South America and eventually travelled across the world, reaching India through historical trade routes. In Kerala, it became an important crop
and food, particularly among communities looking for an affordable, dependable source of food.
And somewhere along that journey, kappa met hot oil.
Thin slices.
A little salt.
A serious amount of crunch.
And the Kerala Tapioca Chip was born.
Why Kappa Crunches Differently
Tapioca has a naturally high starch content.
When sliced thin and fried, it develops an incredibly light, brittle texture that breaks almost instantly when you bite into it.
In Kerala, tapioca chips are known as kappa varuthathu and are closely associated with the state's snack culture and nostalgia.
Today, you can find them alongside tea, at family gatherings and in snack jars at home.
A humble root.
A hot kadai.
And one seriously addictive crunch.
That's Kerala in a chip.
